Ingredients
- 600g or about half a watermelon
- 140g bag of rocket or salad leaves
- 1 bunch of fresh mint, chopped
- 200g creamy feta, crumbled
- 1 small red onion
- 2 tablespoons white wine vinegar
- Good drizzle olive oil
- 1 lime
Method
- Scoop out and chop the watermelon flesh into chunks, discarding the peel.
- Peel and finely slice the onion, pop it in a small bowl with the vinegar and lime juice and set aside for 10 minutes. This will remove the sting from the onion.
- On a large platter, spread salad leaves, watermelon, onion, mint and feta.
- Mix the vinegar and lime juice mixture with olive oil and drizzle over the salad just before serving.
Optional: Top with any extras – cucumber, tomatoes, blueberries, orange segments or cashew nuts are crowd favourites.
